SOPRESSATA - About the product

This is one of the most typical and leader products of the tradition from Calabria. It is prepared with the chosen low fat pork (thigh, shoulder, fillet and ham trimming) and mixed with some fat pieces (2-3%), with the addition of some natural spicy products (salt, black peppercorn, red pepper sweet or hot). The pork is knife edge cut, sausage in gut tied-on and pierced in several parts with a needle to ooze out the air, present due to the sacking; then they are seasoned according the most ancient traditions of Calabria for at least a period of 45 days. All the cold cuts from Calabria, safeguarded by the Pod (Protected Origin Denomination), are produced with pigs raised in our region. This is a wonderful cold cut to taste together with a red wine glass. The soppressata from Calabria can be both sweet and hot and it is produced with chosen, savoury pork: the sweet soppressata is flavoured with black pepper, the hot one is flavoured with hot pepper.
